Nguyên liệu của món thịt xá xíu:
bánhmì: Thịt xá xíu đậm đà cho bữa tối - Ẩm thực - ZINGNEWS.VN
Thịt heo: 0.5 kg. Có thể dùng nạc dăm đầu mềm, nạc vai hoặc ba rọi đều được. Công thức dưới đây sử dụng nạc dăm vì nạc dăm không quá nhiều mỡ các chị em nhé. Thịt heo dùng để chế biến nên mua thịt tươi ngoài chợ, siêu thị về rửa rồi dùng ngay chứ không nên dùng thịt đông lạnh.
Thịt mua về mọi người rửa sơ, sau đó ngâm vào nước muối + giấm loãng cỡ 15 phút sau đó rửa sạch để ráo rồi cắt dọc theo thớ thịt nhé.
Mạch nha: cỡ gần 1 muỗng ăn cơm, bỏ vào lúc cuối cho thịt bóng bóng thơm thơm
Làm sốt ướp thịt:

Hành tím 3 củ
Tỏi 1 tép lớn xay nhuyễn
Muối: 4g
Đường: 20g
Hạt nêm Knorr: 5g
Tiêu: 2g
Bột ngũ vị hương: 1g (ngũ vị hương mọi người nên dùng ít thôi, dùng nhiều quá sẽ nồng lắm)
Dầu hào: 8g
Sốt xá xíu Lee Kum Kee: khoảng 25g
Nước tương: khoảng 15 ml
Rượu Mai Quế Lộ: khoảng 18 ml (không có thì dùng rượu trắng nấu ăn thay cũng được)
Mật ong: 6 ml
Dầu mè: 6 ml
Bột xá xíu lobo của thái: 7g (ai thích thì bỏ vô cho màu đẹp, không thì không bỏ cũng chả sao, không ảnh hưởng tới vị lắm đâu mọi người nhé)

Cách chế biến:
Bước 1:
Cho thịt đã để ráo vào hỗn hợp sốt ướp bên trên. Thoa đều sốt ướp lên thịt. Để bên ngoài khoảng nửa tiếng rồi cho vào tủ lạnh ướp thêm 4 tiếng nữa. Ướp qua đêm càng ngon nhé.
Sau đó lấy thịt đã ướp, xếp hết lên nồi chảo, đổ cả sốt ướp vào hết. Rồi cho ít nước lọc vào, nấu trên lửa to, trở mặt cho săn 2 mặt thịt khoảng 5 phút
Nấu thêm khoảng 20 phút nữa trên lửa vừa, trở thịt đều cho chín cả 2 mặt. Sau đó cho mạch nha vào trộn đều cho mạch nha tan ra và giảm lửa. Rim thêm khoảng 5-10 phút nữa. Trong lúc rim nếu thấy nước sệt quá các bạn có thể bỏ thêm ít nước lọc vào để không bị khét thịt nhé.
Dùng đũa xiên thử vào thịt, nếu đã chín thì các bạn tắt bếp để nguội là có thể cắt ăn được rồi

Một vài lưu ý:
Sốt Lee Kum Kee có dạng gói, 1 gói 45g đủ xài cho khoảng 1 kg thịt, nếu chị em chỉ có ý định làm ăn thử 1-2 lần thì mua gói cho tiện. Trong Coopmart, Emart, hay Lotte mart đều có bán.
Mạch nha nếu chị em muốn mua thì ở tiệm bán đồ làm bánh như Beemart, Tân Nhất Hương, … đều có
Rượu Mai Quế Lộ: chị em có thể mua đồ về tự ngâm, hoặc mua rượu người ta ngâm sẵn ở mấy chỗ bán đồ làm bánh trung thu ấy
Ăn với cơm, xôi, bún mì xào hay bánh mì gì cũng ngon hết, chan thêm nước rim thịt vào là ngất ngây luôn!
